Teas for Sale
The Teas we carry for purchase are personally sourced Certified Organic from small Taiwan farms. Many are unprocessed, (raw) and all are exceptionally 'clean' with no molds, yeasts, or other contaminants. Most of our teas are harvested within the year and not aged.
- "White Teas' are completely unprocessed except for sun drying.
- "Green Tea" may be heat-dried and rolled to lock in flavor.
- "Oolong' typically has a light roasting in addition to drying.
- "Black Tea" may be roasted, fried, rolled and aged.
- "Red Tea" typically picked from red colored leaves
Puerh, Lio Bao and Mongolian are fermented teas and are usually aged and typically pressed into bricks. We rarely sell these teas because of the difficulty to verify their source or methods of storage.
Raw teas usually require 3-6grams per (3-cup) pot and require a longer steep time (since the leaves are not broken down from processing). Decant immediately or they can become bitter. Use a lower temperature (pre-boiling). After three steeps, put the dregs into the freezer and when you have a handful from several pots, boil for cauldron tea. Store the brewed tea in jars in the fridge for up to 2 weeks.

This is a strong and fragrant high altitude Oolong, from the highest farm in Taiwan.
Organic
The red color of the leaves is revealed at the first steeping, and the tea color is very red as well. Short brewing time, lower temperature, use a gram less than usual.

If you like milk with your tea, this natural farming tea is very mild with a pronounced toffee-like flavor.

Orange Tea
Aged 10 years
This is a very sour tea. It brews with a flavor similar in strength to lemonade with a very Tangerine taste. You can brew it by itself or add a little bit to other teas. Blended with Green Tea it makes a very refreshing beverage for hot weather. Comes with a cloth bag with which to pulverize it with a hammer.
